Project Food: Day 2

Breakfast: Gallo pinto (see day 1 :) and fried cheeeese! One of my favorite things about Nicaragua is fried cheese. I'm sure its entirely unhealthy but I don't care. I could eat it forever. I don't have the drink in the picture, but it was Orange Tang.
 

Lunch: White rice, gallo pinto, and a soy patty. Like I had mentioned, during the week we eat lunch from our feeding center where we occasionally serve a rice soy mixture. The patties are really quite delicious. You may ask why there is white rice served together with gallo pinto. . . well just refer back to the idea of spaghetti being served with rice. . . we're in Nicaragua and that's just the way its done.  

 
Dinner: Rice with Carne molida tapada. I don't know how exactly that translates but let me explain. The rice part is obvious. Carne molida is ground beef and the tapada part can be applied with whatever kind of meat you use. Its maybe like a stew sauce with ground beef, carrots, potatoes, and chayote. Pretty tasty. And served with lemon tea.

Project Food: Day 1

Breakfast: Gallo pinto (traditional Nicaraguan food, essentially just rice and beans mixed together, but because 'rice and beans' is different than 'gallo pinto' in the way it is prepared and served, this is not rice and bean) with an egg and corn tortilla. With hot tea to drink :) The tea's not so much a Nicaraguan thing, just a me thing. They would all have coffee.
 
 
Lunch: Rice and spaghetti. During the week lunch is prepared and served in the Feeding Center that we have here at the compound. They cook for over a 100 people; mostly kids but also elderly, handicap and us here at the house. Rice put with spaghetti is a surprisingly common meal down here. I think that for us in the States we would not dream of putting carbs with more carbs, but here people eat to get full, and I've actually grown to like the combination of the two together. The only thing that still gets me is that they usually use ketchup as sauce on spaghetti. . . I haven't quite gotten used to that flavor. And to drink: Tea with lemon, that is another favorite. We drink a lot of it, mostly because its the only type they sell in bulk at Pricemart, but also because we like it.
 
 
Dinner: Chop Suey. I love this meal. It's one of my favorites, really. That could be because it has a different flavor from what we usually eat, also because its loaded with vegetables :) Its rice (obviously) and Chop Suey which is made of shredded chicken, cabbage, carrots, and chayote (a squashlike vegetable that is super common down here. we eat it often) cooked together in a soy sauce with the Chinese noodles on top just for fun.
 

Catch up

So sorry that I have been slightly absent recently. I have a number of things to post about and will hopefully be on top of it over the next few days! We didn't have school today because it is Mother's Day, also we don't have school tomorrow. . . So its making for a fun extended weekend.

Over the last month I was in the US for a couple weeks hanging out with my awesome family, and since I've been back we've been going crazy celebrating birthdays! While I was home we celebrated my sister and dad's and since I've been back Debonney, Luviana, Ofelia, Alejandra and Samari have all had birthdays! So, I will be sure to put something up showing all of the festivities. I'll also show you the activities that went on for Mother's Day, and give you a little glimpse of being back in the States.

I've also started a new 'project,' or so it can be called. This project is to show what exactly we eat :) I would say "What do you eat down there?" is one of the most common questions I get asked. So I have been working on taking pictures of every meal we have for the last few days so that I can give people a better answer than. . . a lot of rice and beans. I figured I would take pictures for a few days and see if I could keep up with it before I started sharing them, and so far its been going pretty well! So maybe I will put my first day up after this.

God is continually good and forever blessing me in ways I couldn't have ever imagined. Thank you for all your continued support and prayers! (on behalf of me, these two goofs and the rest of them I live with too)
